The food on board has been created by top Brazilian chef Mara Salles from the multiawarded restaurant Tordesilhas in São Paulo, Brazil. Salles is famed for her passion and dedication to Brazilian food.
 Mara Salles is the world’s number one authentic Brazilian chef. For 20 years she has put regional Brazilian food on her menu, from chilli-laced African stews of Bahia to robust marinades and gaúcho traditions from the far south. 'My work is to preserve our heritage before we lose it', she explains. 'I am inspired by our mothers, aunts, godmothers or any other housewife, in fact anyone who takes pleasure in cooking and receiving guests.' Growing up on a coffee plantation, Mara learned to cook from her mother who at the age of 77! still cooks alongside her every day at Tordesilhas. Mara Salles’ food can best be described as a dialogue between contemporary and traditional Brazilian food. She is not a theoretical chef but conducts experiments and discovers new facets to ingredients used in the traditional dishes.
'The essence of Brazilian cuisine is in the broths used in all our major dishes, such as paneladas, and in recipes which may have no commonly recognized name, but are still made with affection, using techniques honed in the kitchen.' For years, proper Brazilian cooking did not receive the respect it was entitled to from Brazil’s food scene and Salles literally rescued many recipes and cooking techniques from oblivion.
